In Hollywood, no one truly dies unless you actually see them die onscreen. None of the cast were seen being chewed on. They could have swam for it. Where to? Just away from the zombies. They could have gotten back in the boat & drifted off. Where to? Again, just away. They could have gotten to a part of the island (not seen onscreen) that protected them from the zombies. Etc., etc., etc.
There's always a possibility.
